Yes, you heard it right..Blueberry Soup. It’s incredible and perfect for those of us with a sweet tooth and are looking for a wonderful low-calorie, yet filling fruit option.
1/2 cup frozen unsweetened pineapple juice – do not dilute (this is the sugar part so be careful)
1/2 cup water
1 tspn fresh lemon juice
3 cups fresh blueberries – freeze them for a better consistency
Combine the pineapple juice, water, and lemon juice in a blender. Add 2 cups of the blueberries and blend until smooth.
Pour the blueberry mixture over the remaining 1 cup of blueberries and mix well…serve cold. 6 – 1/2cup servings. 70 calories/serving
